How to Make Banana Nut Bread From Scratch

In this episode of Baken' Jake I will teach you how to make banana bread and banana nut bread from scratch.  You may also make chocolate chip banana bread with this recipe.  Banana bread was developed somewhere in the 18th century and became popular in the 1900's with the use of baking soda.  That is basically all the history there is to banana bread. 
The recipe is as follows:
1 ¼ cup sugar
½ cup butter or margarine
2 eggs
3-4 medium sized bananas
½ cup buttermilk
1 teaspoon vanilla
2 ½ cups bread or all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts or chocolate chips or both (optional)
Preheat the oven to 350' F.  Puree the bananas until you get about 1 ½ cups worth.  Use greener bananas for a more bitter bread or browner for a sweeter bread.  Melt butter and mix in large bowl with sugar.  Add bananas, buttermilk and vanilla.  Beat with hand held blender until smooth.  Stir in flour, baking soda and salt until moist.  Stir in nuts or chocolate chips of you want them.  
Pour batter into a well greased or buttered 9x5x3 bread pan and bake for about 1 hour 20 minutes or until a skewer comes out almost clean from the center of the bread.  If nothing is on the skewer when it is removed then you have probably cooked it too long and will result in a dry bread.  Let cool for 10 minutes then loosen sides with knife.  Remove from hot pan to avoid further cooking and let set for another 2 hours.  If you do not wait this long the bread will not have time to set and will remain mushy rather than having a solid structure.

I plan to do many baking tutorials. I will post a book review for every book I've read since January, 2011 and the after that I'll post a review for every book that I read. I will post videos on determining first editions of certain books and I will have many tutorials on how to do other things such as how to solve the rubiks cube. When it gets to be spring and summer I'll put up vids on determining edible plants and their uses as well as medicinal plants. I plan to do a few comedy vids as well. That is all I have in mind right now. There will probably be more to come though. : )
